Lemon Drop Tea Cakes

One of my favorite things about owning a Tea Room is getting to express my creativity. Whether it is in creating new teas, merchandise, gardens, vignettes or recipes. Here is our beautiful Server Extraordinaire, Miss Amber, holding a partial batch of my new recipe, Lemon Drop Tea Cakes. I am happy to share my recipe with you! (They are so easy to make and taste so refreshing in the summer!)
Reba's Lemon Drop Tea Cakes
2/3 cup Butter, softened
1 cup granulated sugar
2 Tablespoons Lemon Flavoring
2 Eggs, beaten
2 Tablespoons Baking Powder
2 cups all-purpose flour
1/2 teaspoon salt
Mix butter, sugar, flavoring and eggs together and beat with an electric mixer until light and creamy. Add remaining ingredients and drop by 1/2 teaspoon (each dollop of dough will be about the size of a small melon ball er) onto a lined cookie sheet. Bake at 400 degrees for about 6 to 7 minutes. Cool on a cookie rack. Makes about 150 tiny tea cakes. When completely cooled, frost with the following frosting recipe. ( I use a large cake decorating tip to make the frosting look like a candy kiss.)
Lemon- Cream Cheese Frosting
Two 8oz packages of Cream Cheese, Softened
2 1/2 cups Powdered Sugar
2 Tablespoons Lemon Flavoring
a few drops of yellow food coloring.
Begin by beating the cream cheese till smooth, continue beating while adding the powdered sugar, a little at a time, the lemon flavoring and the food coloring. Frost the tea cakes and
